I eyeballed a lot, but this should serve two people.
For Sliders:
- 1/2 pound ground lamb (only $6.99/lb at Whole Foods!)
- 3 tablespoons of oregano
- 3 minced cloves of garlic
- 3 stalks of green onions, diced
- Feta Cheese
- Freshly cracked pepper
- Tzatziki Sauce (homemade or store bought)
- Pepperidge Farms Slider Buns
Combine everything (except the buns and sauce!) in a big bowl and mix it up very well. Mold into flattened patties that would fit the size of your bun. Heat a grill pan or skillet to medium high heat, drizzle EVOO on the pan and place the patties on the pan for about 2 minutes on each side. Toast the buns while you are cooking the meat. When everything is ready, spread some tzatziki sauce on the bun and add the meat.
For added crunch I also place a slice of cucumber from the salad on top of the sauce. I also just eat these open-faced so there isn’t too much bread and you can really taste the lamb.
This could also be made into full sized Lamburgers if you only have regular sized buns, but sliders are cuter and easier to eat! I could also see adapting this into greek meatball if you added some breadcrumbs and egg!
For Salad:
- Small container of cherry tomatoes, cut in half
- One large cucumber
- Quarter of a white onion, diced
- One or two lemons (for juice)
- EVOO
- White Wine vinegar
- Oregano
- Salt
- Pepper
- Pitted and halved Kalamata Olives (I forgot to add these but I know they would make it great)
- Fresh mint (optional)
